Coconut Rice Noodles

Ingredients Quantity
Oil 1 Tbsp
Garlic paste 1 Tbsp
Celery, chopped 2 Tbsp
Coconut cream 1 cup
Mushroom ½ cup
Slices tomatoes ¼ cup
Spring onion white, thinly sliced ½ cup
Chili powder ½ tsp
Sugar 2 tsp
Salt To taste
Black pepper, freshly ground ¼ tsp
Rice noodles, cooked 3 cups
Beans sprout ½ cup
Spring onion green, finely chopped ½ cup
Coriander, chopped ¼ cup

Method

Heat the oil in a wok, add the garlic paste and celery stalks and stir fry for 1 minute.

Add the coconut cream, paneer, tomatoes, spring onion whites, chilli powder, sugar, salt and pepper and stir fry for 2-3 minutes.

Add the noodles and mix well.

Just before serving, add the beans sprouts and spring onion greens and toss once.

Serve hot garnished with coriander.
